Hyatt is entering the final quarter of 2026 with a
series of hotel openings and brand developments across the Americas. Mexico
plays a central role in the expansion, with Park Hyatt building a
three-property presence in the country and further growth planned for Alila,
The Unbound Collection by Hyatt and Grand Hyatt.
The developments range from luxury resorts on Mexico’s
Pacific and Caribbean coasts to an urban Park Hyatt in Mexico City. Hyatt is
also adding properties in Canada and the Caribbean while introducing new guest
experiences across its existing luxury portfolio.

taste and elegance,” says Tamara Lohan, Global Brand Leader – Luxury at Hyatt.
She says the group intends to give travellers more choice while maintaining a
distinct identity and personalised service at each property.
Park Hyatt builds three-property portfolio in Mexico
Park Hyatt Cabo del Sol opened in Baja California Sur
in December 2025, becoming the brand’s first property in Mexico. The oceanfront
resort combines contemporary Mexican architecture with dining and wellness
concepts influenced by its coastal setting.
A second milestone is expected before the end of 2026.
Park Hyatt Riviera Maya is scheduled to become the first all-inclusive Park
Hyatt worldwide. Located on Mexico’s Caribbean coast, the resort will offer
personalised pre-arrival planning and entirely à la carte dining as part of its
interpretation of the all-inclusive model.
Park Hyatt Mexico City Polanco is due to follow in
spring 2027. The 155-room-and-suite hotel on Campos Elíseos will overlook
Chapultepec Park, with Mexican art, design and cuisine incorporated into the
property.
Together, the three hotels will give Park Hyatt a
presence on Mexico’s Pacific coast, Caribbean coast and in the capital.
Unbound Collection expands in Canada and Mexico
The Unbound Collection by Hyatt is also growing across
the region. The Clayfield in Niagara-on-the-Lake, Ontario, adds a property
inspired by the surrounding wine country, using natural materials and design
elements referencing the region’s clay-rich soils and vineyards.
On 2 November, the adults-only Impression Isla Mujeres
in Mexico is scheduled to join The Unbound Collection. The all-inclusive resort
features suite accommodation, butler service and a strong emphasis on
personalised hospitality.
Hyatt is also introducing a new experiences initiative
across selected Unbound Collection properties. The programme will focus on
locally rooted activities ranging from private culinary and wine experiences to
encounters with artists and other cultural figures. The Georgian in California,
Hotel La Compañía Casco Antiguo in Panama and Impression Isla Mujeres are among
the participating hotels.
Alila expands from California to Riviera Maya
Alila added its fourth property in the Americas in
February 2026 with the opening of Alila Mayakoba on Mexico’s Riviera Maya. The
resort occupies 60 acres of beach, lagoon and jungle and offers 182 rooms,
suites and villas.
Six dining venues and an Alila Spa form part of the
resort. Its architecture uses locally sourced materials and incorporates work
by regional artisans, while wellness programmes developed with local
practitioners add elements of Yucatán culture.
Alila Mayakoba joins Alila Ventana Big Sur, Alila Napa
Valley and Alila Marea Beach Resort Encinitas in California.
From 1 October, all four properties will participate
in Erewhon’s Member Lifestyle Collective, a partnership aimed at guests
interested in wellness and lifestyle experiences.
Grand Hyatt prepares three resort openings
Hyatt’s expansion in Latin America and the Caribbean
extends beyond its dedicated luxury brands. Three Grand Hyatt resorts are
scheduled to open during the fourth quarter of 2026.
Grand Hyatt Grand Cayman will expand the brand’s
Caribbean presence, while Grand Hyatt Cancun and Grand Hyatt Los Cabos will add
two major Mexican leisure destinations to the portfolio.
The properties in Cancún and Los Cabos will also
introduce additional all-inclusive options under the Grand Hyatt brand.
With openings spanning Baja California Sur, Riviera
Maya, Mexico City, Cancún and Los Cabos, Mexico has become a particularly
important market in Hyatt’s current expansion across the Americas.
